ドーナッツは 日本でも、手軽なスナックとして多くの人々にお馴染みなものであると思いますが、アメリカ合衆国でもドーナッツは、昔から朝食や小腹を満足させるスナックとして、とても人気があります。
ドーナッツの起源は、もともとは、オランダ語のオリークック (olykoeks) というもので、英語では”oily cakes”となり、油でできたケーキを意味したそうです。現在でもオランダでは、オリーボーレン（oliebollen：油で揚げたボール）と呼ばれる、卵と小麦粉と牛乳と酵母で混ぜたものを油で揚げたものがありますが、それは オリークックという名前から次第に変化したようです。（参照：The History of the Doughnut：A look back at the men, women and machines that made America’s favorite treat possible：https://www.smithsonianmag.com/history/the-history-of-the-doughnut-150405177/）
米国で、ドーナッツが、本格的に普及したのは、第1次世界大戦中のことでした。それは、ザ・サルベーション・アーミー(The Salvation Army：救世軍)や赤十字などの組織の女性メンバーによる、兵士達への慰問の際にドーナッツとコーヒーを届ける支援活動がきっかけでした。
ザ・サルベーション・アーミー（救世軍）という組織の始まりは、1865年に、イギリスのウィリアムブースという、キリスト教プロテスタントのメソジストの牧師と妻の、○○が、犯罪やアルコール中毒、貧困や失業など当時地域に蔓延していた社会問題の改善に取り組む運動を始めたことに由来します。この運動が、のち、ザ・サルベーション・アーミー（救世軍）と呼ばれるようになり、米国や日本他、様々な国でもその運動が展開されるようになりました。それは、現在でも続いています。

米国国立公文書館には、ドーナッツに関する写真資料が いくつかあります。以下にご紹介するのは、今から100年以上前の写真です。第1次世界大戦中は、ドーナッツを大量生産できるような機械はまだなく、めん棒を使って、生地を平らにして、とドーナッツ型で型を取って、油で揚げていました。

左下の写真は、兵士の束の間の休息で目の前のドーナッツを待つ兵士達の姿です。右下の写真は、フランスのアラゴンという地域に敵のドイツ兵が作った塹壕に沿った道で、米軍兵士たちがドーナッツの支給を待って列を作っている光景です。ドーナッツやその他の食べ物を提供する、救世軍側も、兵士達が戦っていた前線近くまで行っていたことがわかります。

出来立てのドーナッツを、手渡す形で提供することだけでなく、棒に指して３つずつ提供するようなこともあったようです。兵士達の顔も和らぎ、ドーナッツを喜んで食べていたことが伺われます。こうした救世軍が、戦地でどれだけドーナッツ提供を通じて兵士達を勇気づけていたこともわかりますし、同時にそうした戦争遂行の努力がポスターにもなっていました。
